This seems like a lot of extra steps that were not used in class. For example, I don't remember the fraction being a part of simplifying. Seems very complex for just simplifying.

It is true that showing 2/2 is a bit more detailed answer than what you would normally want. However there is a lot of students who do not understand that the exponent under the root (2) is reduced with the root index (2) -- that is why they both disappear.
Sometime we have to compromise - some students find that we offer too many step, others that there are too few. If you understand how the index and the exponent are reduced, just ignore that step - it is not necessary to show it in your work
